Some of the world's best Chardonnay comes from the Adelaide Hills, they grow perfect in a cool climate environment and produce a simply gorgeous sparkling. We didnt' hold back when producing this wine. Made in the tradional method known as "Methode Traditionelle" this wine is developed into a base wine with the first fermentation, then further fermented in the bottle. After a painstaking process of regularly turning bottles and storing for over 12 months, the bottles are then de-gorged by hand and ready to enjoy. The result is a beautifully rounded, naturally formed sparkling with subtle oak and autumn fruit flavours - think Apple, Pear and Quince.
The wine is named after "Patricia", affectionately known to all as "Pat", whom has tended to these vines for over twenty years. She is a huge Champagne lover with a special love of Moet. Even with the expensive process of producing such a high quality sparkling, Geoff is confident he has saved himself a fortune, as it is Pat's favourite.
